Eggplant Parmesan — An All Day Affair

Today, after mak­ing a deli­cious break­fast I got to work on mak­ing a roasted tomato sauce that I’ve had in mind since we got a won­der­ful bounty of heir­loom toma­toes from the CSA this week. I roasted toma­toes, gar­lic, cayenne, and banana pep­pers in olive oil and some salt & pep­per then puréed it until it was just shy of smooth. After adding fresh basil, rose­mary, oregano and some more fresh chopped gar­lic, the sauce sim­mered for roughly 2 hours. Grilled Ratatouille & Chicken

Tonight we had my par­ents over and decided to try some­thing new. Megan found this awe­some recipe for grilled rata­touille that was amaz­ingly easy. Cut egg­plant, bell pep­per, zuc­chini, onion and tomato in half, toss in olive oil salt & pep­per and throw it on the grill. Rough chop with some fresh basil and toss with red wine vine­gar and you have the eas­i­est rata­touille ever.

I grilled some Italian dress­ing mar­i­nated chicken breasts to go with the rata­touille. We also made a great salad to go with it topped with an awe­some strawberry/lemon vinai­grette that Megan made. My mom brought some peach cob­bler for dessert and a great & tasty time was had by all!

Simple Salad, Seriously Scrumptious

I really enjoy a good salad, espe­cially a large din­ner salad. I also enjoy grilling, fruit, bacon and good cheese. Tonight I decided to put them all together in an exper­i­ment of sorts.

Grilled Cantaloupe Salad

Grilling fruit has always pro­duced a great sweet/smoky taste that I love. When we got a can­taloupe from our CSA I decided to try grilling it. But I didn’t want to just grill it, I wanted to add some taste to it. I made a honey but­ter glaze with some fresh chopped mint and soaked the can­taloupe in it.

After grilling the can­taloupe for a few min­utes on each side, I laid it on a bed of arugula, chopped bacon and fresh Gorgonzola. A very dif­fer­ent taste, but it was really, really good. And, it was juicy enough that no dress­ing was needed.
