Minted Chevre Stuffed Gyro Burger and Parmesan Butternut Squash Fries

I’ve heard many peo­ple say pizza is like sex — even when its bad, you’re still hav­ing pizza. That’s how I feel about burg­ers. And a good burger instantly sends me into culi­nary eupho­ria. One of my favorite burger recipes I’ve devel­oped over the years is a twist on gyros, the slow-cooked spiced Greek meat typ­i­cally served with tzatziki sauce. This burger has been lauded by many friends, includ­ing one who swears it caused her to go into labor (on Labor day of all days!). But tonight I decided to take this burger to the next level, and what bet­ter way than to stuff it with cheese? In addi­tion to twist­ing the clas­sic burger, tonight we also made french fries out of but­ter­nut squash. They were crispy and dusted with Parmesan cheese and totally tasty! Our friend Monica loves to gar­den. So much so that she plants WAY too much and gives tons of home-grown fruits and veg­eta­bles away to her very lucky friends. We received an acorn squash from her along with a bunch of other stuff. For the acorn squash we decided that stuff­ing it some­how would make for a great main dish. First Cayenne Pepper Harvest

20090823 - Cayenne Peppers

This week­end we har­vested the first round of pep­pers from our cayenne plant. This plant is insane! Pictured are roughly 35 pep­pers. A few weeks ago we pulled maybe 5 – 10 ripe pep­pers for some salsa. We’ve also been using greens ones from time to time so I would guess that we’ve pulled maybe 50 pep­pers off this plant. After this har­vest I counted 70 more pep­pers still on the plant! Plus, there are 10 – 15 buds or new growths. For one plant that started out about 4 – 5″ tall, we are very satisfied!

I’m not afraid to admit it. I love Neil Diamond. I sup­pose it’s because my mom did. I remem­ber count­less fam­ily road trips dri­ven to the tune of “I Am I Said” and Saturday after­noons spent clean­ing the house rockin’ along to “Brother Love’s Traveling Salvation Show.” Many of my best child­hood mem­o­ries have one of his songs play­ing in the back­ground. It’s funny how some artists that your par­ents lis­tened to trans­fer over to you. For Megan, it’s Elvis — her dad loved him. One year we got Meg’s mom and dad a bot­tle of Elvis wine for their anniver­sary. To this day I doubt it has been con­sumed for fear mess­ing up the bot­tle by open­ing it. Elvis had a fas­ci­na­tion with fried peanut but­ter & banana sand­wiches. This morn­ing we did our best to make the pan­cake ver­sion and it worked out deli­ciously. Patty Pan Cakes (Faux Crab Cakes) & Arugula Salad with Lemon Yogurt Dressing

A few weeks ago, Megan’s mom gave us a recipe for these fake crab cakes that are basi­cally a fried shred­ded zuc­chini cake. How can that not be good!? Unfortunately, it was right after we fin­ished using the enor­mous amount of zuc­chini we had received that week from our CSA — and that was the last zuc­chini we got. Fortunately, this week, we did receive some patty pan squash and I decided to try using that. I fig­ured if I was using a dif­fer­ent squash I may as well mod­ify the rest of the recipe too (espe­cially after see­ing Nancy Vienneau post about some­thing sim­i­lar). The result was amaz­ing and paired per­fectly with the spici­ness of arugula and the hearty bite of bleu cheese. The lemon yogurt dress­ing was bright and fresh and really tied it all together well. This week we were very excited to see okra in our box from Avalon Acres, our CSA. Growing up, I hated okra. It was slimy and had a ter­ri­ble tex­ture. The only way I would eat it was fried, and even then half the time I’d just pull the bread­ing off and eat that. My grand­par­ents farmed and as a child I would stay with them often. I’ll never for­get going to bed hun­gry on nights okra was served because of the whole “it’s this or nothin’” com­pas­sion of my grand­mother. But now, as an adult, I love it!
