Spicy Grilled Lamb Chops with Tzatziki, Roasted Eggplant & Summer Squash and Lemon Rice

We’ve received an over-abundance of cucum­bers from our CSA this sum­mer. While try­ing to come up with ideas for what to do with them, Megan men­tioned tzatziki sauce. That made me think of gyros which made me think of lamb and sud­denly I wanted lamb chops.

Smoked Turkey BLT with Fresh Cayenne Chipotle Mayo

While water­ing our herbs and cayenne pep­per plant this after­noon I noticed that we have sev­eral pep­pers that have finally ripened. We’ve been using them green for a few months, but now, they are a bril­liant red. I wanted to do some­thing with one of them today and I’ve been crav­ing a good BLT lately.
