    I am not a huge egg­plant fan, but for what­ever rea­son this looks/sounds really tasty…maybe because it is in the same sen­tence as the word “pizza”! A lot of food blogs out there are doing a “Friday Night Pizza” theme, where they make a dif­fer­ent pizza every Friday…while it would be hard to keep com­ing up with new ideas, I sorta want to try it out! :o) If I did it … your pizza would make the list for sure!

    I am won­der though…is the fla­vor of Japanese Eggplant different?

    thanks! yeah the flavour is a lit­tle dif­fer­ent. i think it is a lit­tle sweeter, less bit­ter. also, they are more ten­der due to their much smaller size. we do pizza pretty often. i would love to be a part of that weekly thing if you have a link handy.
