I am not a huge eggplant fan, but for whatever reason this looks/sounds really tasty…maybe because it is in the same sentence as the word “pizza”! A lot of food blogs out there are doing a “Friday Night Pizza” theme, where they make a different pizza every Friday…while it would be hard to keep coming up with new ideas, I sorta want to try it out!
) If I did it … your pizza would make the list for sure!
I am wonder though…is the flavor of Japanese Eggplant different?
thanks! yeah the flavour is a little different. i think it is a little sweeter, less bitter. also, they are more tender due to their much smaller size. we do pizza pretty often. i would love to be a part of that weekly thing if you have a link handy.
