Grilled Ratatouille & Chicken

Grilled_Ratatouille+Chicken

Tonight we had my parents over and decided to try something new. Megan found this awesome recipe for grilled ratatouille that was amazingly easy. Cut eggplant, bell pepper, zucchini, onion and tomato in half, toss in olive oil salt & pepper and throw it on the grill. Rough chop with some fresh basil and toss with red wine vinegar and you have the easiest ratatouille ever.

I grilled some Italian dressing marinated chicken breasts to go with the ratatouille. We also made a great salad to go with it topped with an awesome strawberry/lemon vinaigrette that Megan made. My mom brought some peach cobbler for dessert and a great & tasty time was had by all!
