BLT Inspired Caprese Salad

Tonight I forced my wife to do some­thing she didnt’ want to do: eat tomato. She hates them, even to the point of vom­it­ing while I love them. and when we got them in our CSA box this week, I was so excited!!! As soon as they came, I wanted cap­rese. So tonight, I made it but with a twist.

Few peo­ple are not aware of my love of bacon. BLT’s are such a sim­ple but amaz­ing sand­wich. I fig­ured, why not add bacon to cap­rese? and that’s what i did.

BLT-Caprese

Caprese Salad inspired by a BLT: heir­loom toma­toes, fresh cow’s milk moz­erella, fresh basil and ore­gono from our gar­den and chopped bacon driz­zled with olive oil and sprin­kled with sea salt and fresh cracked black pep­per. Man, it was so good. Megan ate 3 bites and said it was actu­ally good. I’ll call that a win.

And, what’s good food with­out a good drink? The drink in the back­ground is a Gordon’s Cup: gin, cucum­ber, lime & sim­ple syrup. Amazingly refresh­ing and quite a nice acompaniment.
