Tonight I forced my wife to do something she didnt’ want to do: eat tomato. She hates them, even to the point of vomiting while I love them. and when we got them in our CSA box this week, I was so excited!!! As soon as they came, I wanted caprese. So tonight, I made it but with a twist.
Few people are not aware of my love of bacon. BLT’s are such a simple but amazing sandwich. I figured, why not add bacon to caprese? and that’s what i did.
Caprese Salad inspired by a BLT: heirloom tomatoes, fresh cow’s milk mozerella, fresh basil and oregono from our garden and chopped bacon drizzled with olive oil and sprinkled with sea salt and fresh cracked black pepper. Man, it was so good. Megan ate 3 bites and said it was actually good. I’ll call that a win.
And, what’s good food without a good drink? The drink in the background is a Gordon’s Cup: gin, cucumber, lime & simple syrup. Amazingly refreshing and quite a nice acompaniment.
